Pectin vs Gelatin Gummies: Which One Should Your Brand Choose?
The gummy base is the first formulation decision you make, and it constrains everything after it — texture, melting point, texture stability in the warehouse, vegan claim and even the actives you can carry. Choosing between pectin and gelatin is not a marketing preference. It is a technical decision with commercial consequences.

The Technical Differences That Matter
- What is a gelatin gummy base?
Gelatin is animal-derived (bovine or porcine) and produces the springy, chewy texture most consumers recognise. It has a high melting point, which makes it robust in warm warehouses and in transit. It is the traditional and still the most common base. - What is a pectin gummy base?
Pectin is fruit-derived and gives a softer, more jelly-like bite. Its lower melting point makes it more sensitive to heat, which has implications for shipping and storage in warm markets — but it supports a vegan claim, which gelatin cannot. - Does the base affect the actives I can carry?
Yes. Pectin’s lower setting temperature is gentler on heat-sensitive actives, which can favour probiotics and certain vitamins. Gelatin’s firmer matrix can mask difficult tastes more effectively. The right base depends on what you are putting into it. - Which base is more stable in transit?
Gelatin, generally. If you are shipping to a hot climate or storing in a non-climate-controlled warehouse, this matters more than texture preference. Pectin products need a more careful look at storage assumptions.
Commercial and Claims Implications
- Can I make a vegan supplement with either base?
Only pectin. A gelatin gummy cannot be labelled vegan, which rules it out for a meaningful share of the natural and plant-based channel. If vegan is part of your positioning, this decision is made for you. - Is there a cost difference?
There usually is, and it varies with the market price of each ingredient and with the processing requirements. The difference is rarely decisive on its own, but it should be reflected in your quotation. - Which base is better for sugar-free products?
Both can be made sugar-free with a non-sugar sweetener system, but the texture outcome differs and needs to be sampled. This is a case where a spec sheet genuinely is not enough — ask for a sample in your intended base and sweetener system.
How to Decide
- What should I decide first?
Your market and your claim, not your texture preference. If vegan matters, choose pectin. If robust warehousing in a hot climate matters, lean gelatin. Then sample both and decide on mouthfeel. - Can I switch base later?
Yes, but it is a reformulation, not a tweak. Switching base changes the batch, the stability profile and often the artwork if the vegan claim changes. Treat it as a new product development, not an edit. - What should I ask a manufacturer before choosing?
Ask which base they have run at volume, what their process control is for set time and moisture, and whether they will sample both. A factory that only runs one base will present that one as the answer.
